A quick note from the person in charge — “Yamashita’s Yama”
Hello, this is Yamashita, the newsletter coordinator.
Hello everyone. It’s February—Valentine’s Day season. My partner says the 14th won’t work, so I’m preparing for Valentine’s a week early. They like matcha and cookies, so I thought, “Then it has to be matcha cookies, right?” and started making them. I decided to try a quick, moist cookie using chocolate bars and pancake mix. But something is off—Even though I followed the measurements, the dough is too soft and the piped shapes disappear… so… add more flour. (Cookpad says only 17g of flour for 1 chocolate bar; Yamashita used 20g, plus secretly added 5 drops of vanilla essence.)
When I used 2 chocolate bars, 40g of flour still wasn’t enough… okay, let’s just add more~★
Result: 60g flour. Even after chilling, it’s still crumbly, so maybe I should have used 70g.
I’m giving it tomorrow. I plan to spread chocolate on top to “cover it up.” It turned out surprisingly tasty, so I’m writing the recipe below↓
1) Crush 2 chocolate bars (about 100g?), microwave at 600W for 2 minutes to melt.
2) While it’s melting, prepare 60g pancake mix and 3–5 drops of vanilla essence.
3) Mix the melted chocolate (1) with the ingredients (2).
4) Preheat the oven to 150°C.
5) During preheating, pipe (3) onto baking paper however you like.
* If it’s too soft, add flour until it holds its shape somewhat (about 5–15g).
If it’s still too soft, you can give up on piping and switch to brownies by adding flour and eggs.
6) Bake at 150°C for 6 minutes, then chill to finish.
It crumbles easily—please handle it very gently, like a precious flower.
